Quick 'N Easy Blueberry Peach Cobbler

All summer long I have been craving my mom's blueberry peach cobbler. Since summer is pretty much over and it has yet to be delivered to my doorstop, I decided to take a leap and try to make my own version. I had some frozen fruit that I wanted to use up to make more room in the freezer so I wanted my recipe work for that. It turned out great and was super easy to make.

Blueberry Peach Cobbler Recipe  - serves 4 to 8 people (Or maybe just 2, depending on how much you love cobbler!)

1bag of frozen peaches (16 oz) or 4 fresh peaches
1 small bag of frozen blueberries (12 oz) or 1 pint of fresh blueberries
2 tbsp flour
1/2 tsp cinnamon
1/8 tsp salt
3/4 cup of brown sugar
* 1/2 tsp vanilla (add later)
4 buttermilk biscuits (1/2 can)
3 tbsp butter, melted
* 2 heaping spoonfuls of sugar (for biscuits)
* Sprinkle of cinnamon (for biscuits)

Preheat oven to 350 degrees Farenheit.

Combine the peaches, blueberries, flour cinnamon, salt, and brown sugar in a small sauce pan. Stir and heat over medium heat until it starts to bubble consistently. Remove from heat and stir in vanilla.

Cut each biscuit into 4 pieces (making 16 tiny biscuit pieces). Mix 2 spoonfuls of sugar with enough cinnamon to make a cinnamon-sugar swirl. Dip each piece of biscuit into melted butter and then into cinnamon- sugar.

Pour fruit mixture into a small baking dish ( I used an 8 by 8 square caserole dish but a pie pan would work just as well). Place biscuit pieces on top of fruit mixture.

Bake for 20 minutes. Allow to cool for at least 15 minutes before serving. Serve to happy guests or enjoy on a relaxing summer evening.

PS This could easily serve as an amazing breakfast dish. I'll admit that I did have a serving of cobbler and a cup of coffee for breakfast the next day.
